Storage of Fresh Cassava (Manihot esculenta) III. Preserving Chipped Roots Before and During Sun-Drying
Published online by Cambridge University Press: 03 October 2008
Summary
The potential was demonstrated of using sodium chloride and sodium metabisulphite as chemical preservatives during pre-drying storage of wet cassava chips, and during slow sun-drying under adverse weather conditions. Both chemicals permitted chips to maintain a good colour and texture and prevented gross microbial deterioration.
